This easy and elegant recipe may mostly be prepared in advance. Make the salsa, prepare the quesadillas and then cook them close to the last minute. Warm, fresh, flavorful and hitting the spot, what is not to enjoy? Not a fan of cilantro? OK, leave it out! But most importantly, enjoy this American tradition with good food!
