Baking is the perfect activity for a snowy day

We enjoyed another white Easter here in Denver with the quarantine adding an interesting twist. But here it is, the day after and it is still cold. What happened to the 70 degrees we had Saturday? There is never a dull moment in the Rockies! Most years we can ski and boat in the same day and this year is no exception…oh wait, the ski hills closed early due to the virus! Oh well!
Given the chilly weather that insists on lingering, let me share a childhood recipe that was a favorite, Peanut Butter Cookies. Fire up the oven and warm up the kitchen. I added chocolate chips, which can only improve a recipe, right?! This is a classic recipe and a keeper. I hope you enjoy it with ingredients I bet you already have at home.
As always, have fun with this recipe and keep it eclectic!
