It is National Carrot Cake Day so this one is really obvious…enjoy your Vitamin A and this yummy dessert! I love the recipe just the way it is but hey, feel free to change it up and make it your own. I’ll probably try coconut oil in lieu of vegetable oil next time, my new favorite. If possible, I love using Saigon Cinnamon and Mexican Vanilla, requiring a short trip to a local specialty spice shop. If you cannot do that, no biggie, you will love it regardless.
