Happy Cinco de Mayo with Mexican Wedding Cakes

Here’s a tasty little cookie recipe I’ve had for years and have known by different names. It seems everyone wants to claim this easy dessert! “Mexican Wedding Cakes” and “Russian Tea Cakes” are the two most familiar to me. If you are a fan of light, buttery cookies with a hint of sugar, these are for you. And they are easy to make!
Upon doing a little research, I found that these cookies are often made with pecans instead of almonds in Mexico. They are called “Besitos de nuez” meaning “Pecan kisses.” I love pecans so this sounds delicious to me! They are also often made for baby showers, family parties or given as little Christmas gifts packaged in cellophane bags.
Whether you celebrate Cinco de Mayo or just need a pretty cookie in your recipe collection, this one is a keeper!
