Imagine a day dedicated to a childhood favorite – Oreos! Yes, it is true and here’s my favorite recipe to enjoy these tasty cookies. Transform Oreos into my Cookies and Cream Truffles and you will find a new favorite. What’s not to like about a recipe that’s easy, elegant and has very few ingredients? Right! This recipe is one of many, 101 to be exact, from Eclectic Entertaining – Small Plates & Dainty Desserts. This cookbook is literally “Cooking 101” as it contains as many photos as recipes. Serious! Who doesn’t like to know what the finished product will look like? I find most cooks are visual and strive for a pleasing result with both appearance and flavor. So here you go, enjoy those classic Oreos in a new form. This is yet one more make-ahead recipe to remove that last-minute stress so many feel when entertaining. I make these days in advance of an event and am always proud to serve them. If you happen to have Mexican Vanilla Extract, I recommend using it. I love its robust flavor. Happy National Oreo Day!
