Happy St. Patrick’s Day with Irish Soda Bread
Irish Soda Bread is a classic Irish bread with ingredients you probably already have at home. For all of us practicing “social distancing” and trying to limit trips to the market, this is the perfect recipe for March 17. If you have all the ingredients but the buttermilk for this recipe, have no fear! Put one teaspoon of vinegar, any kind, into a glass measuring cup and fill it to the needed level with regular ol’ milk. Genius I know. I’ve done this so many times so know it works.
There are so many reasons to make this bread beside the fact that it is delicious. It is a quick bread so no yeast is necessary, yay, with no chance of a failure. Let the kids help you and call it a science lesson! They are probably needing a break from their electronic devices by now anyway. Irish Soda Bread is not super sweet, which is a plus to me. You may change up the dried fruit like I often do. Today I made mine with craisins and dried blueberries instead of raisins. Make it your own and enjoy!
As always, just keep it eclectic! Barbara
