Move over, Mashed Potatoes, and make way for Edamame Puree!
A friend recently posted a dinner on social media she had prepared for her family. While the entire shrimp meal looked amazing, the Edamame Puree caught my eye. If you are like me, you’re familiar with Edamame as an appetizer only. This intrigued me enough that I asked if she’d share her recipe. Thankfully, she gladly forwarded it along with her ideas on how to vary the dish. I made this Edamame Puree last week and have already enjoyed it with salmon, shrimp, scallops and steak! Yes, it goes with everything!
Why is edamame so popular right now? Besides being low in calories, it is high in soy protein, is a good source of fiber, vitamin K and antioxidants. This sounds like a Superfood to me!
The next time you need to round out a menu with something green, try this Edamame Puree on your friends or family! Sorry mashed potatoes, you have been replaced.
