- 22-26 chunks of pineapple (canned is easiest)
- 2.52 ounces microwave bacon, cut in half
- 1/3 cup brown sugar
- 1/2 teaspoon chipotle powder
- 1/2 teaspoon ground pepper
- 1/2 teaspoon cinnamon
Method
Step 1
Mix together: sugar, chipotle powder, pepper and cinnamon.
Step 2
Dredge bacon slices through sugar mixture, coating each side well.
Step 3
Place a chunk of pineapple on bacon and roll up, then secure with a toothpick. Continue until all ingredients are used up.
Step 4
Place on baking sheet and bake for 6 minutes at 400 degrees, serve.
