Slice brie horizontally and remove top, set aside. Scoop pesto onto bottom half, cover to edges and so that it is about 1/4 - 1/2" thick. Replace top onto pesto and place brie in a glass pie dish that is just slightly larger than the brie. Heat oven to 350 degrees. When it reaches temperature, turn oven off and place brie inside. Let it bake for 30-45 minutes, remove and serve with crackers and sliced apples. The pesto will ooze out the sides and the brie will be the perfect spreading consistency.
Leftover tip - it is great the next day over pasta!Method
