Preheat oven to 300 degrees. Mix nuts and syrup, coating nuts completely. Spread them out onto a jellyroll pan and bake for 20 minutes, turning halfway through. Set aside to chill. To assemble tortillas, place a few strips of brie on half a tortilla, a few mapled nuts and cilantro sprigs. Press together firmly and set aside until all have been assembled. Next, heat a very large frying pan with butter, or coconut oil on medium heat, taking care not to burn the butter or oil. Place 2 quesadillas inside pan to cook at a time, cooking just long enough to brown each side and to melt the cheese. Place finished ones on a baking sheet in a warm, 250-300 degree oven while the rest are being cooked. To serve, cut each tortilla into 3 triangles using a pizza cutter, if available, and serve with peach salsa. For the Peach Salsa:
