Ingredients

  • 4 large sweet potatoes, peeled
  • 1/4 cup coconut oil
  • ~1 tablespoon chipotle powder
  • sea salt, ground peppercorns to taste
  • brown sugar, optional
 

Method

Step 1

Slice sweet potatoes about 1/4" thick and place in ungreased glass dish, standing upright.

Step 2

Combine chipotle powder into coconut oil, melting oil first if solid. Pour over potatoes evenly, which will allow the flavors to ooze between the slices. Salt and pepper to taste. Sprinkle with brown sugar, if desired. Sprinkle with more chipotle if a really spicy flavor is needed!

Step 3

Cover tightly with foil and bake at 375 degrees for one hour.

Step 4

This is a terrific twist on traditional sweet potatoes!
