Ingredients
In a double boiler, melt together butter, brown sugar and water. Add chocolate chips and stir until melted. Remove from heat and allow to cool, add vanilla. In large mixing bowl, combine flour, salt and baking soda. Add chocolate mixture and blend completely. Add eggs and blend. Chill dough thoroughly. Meanwhile, remove all mints from wrappers and cut in half, set aside. Using an ice cream scooper, create small balls by scooping a level scoop of dough and then dividing it into four small balls. Place on ungreased baking sheet. Bake at 335 degrees for 7-9 minutes. Remove from oven and place a mint half in center of cookie. The warm cookie will melt the chocolate. With a butter knife, swirl melted mint to glaze top of cookie. Cool on cooling racks. Makes 99 cookies.Method
