Ingredients
Preheat oven to 425 degrees.
In a large bowl, mix olive oil, lemon pepper, garlic powder, chili powder, paprika, black pepper and salt. Slice corn lengthwise into half and then cut the halves in half, using a thin, sharp knife. You will end up with 32 "ribs."
Toss the ribs into the bowl of spices and mix well, fully coating them. Arrange ribs in a roasting pan and roast for 20 minutes.
While the corn is cooking, in a small bowl, mix sauce ingredients until well blended: mayonnaise, chipotle peppers, lime juice and salt. Serve corn ribs on a platter with dipping sauce. Enjoy!Method
