Ingredients
- 7 cups cooked, peeled and mashed sweet potatoes (about 11 medium sized ones)
- 1/2 cup sugar (optional-I like it savory so skip it)
- 1/2 cup melted butter
- 2 eggs
- 1 teaspoon vanilla extract
- For the granola topping:
- 1 cup brown sugar
- 1/2 cup melted butter
- 1/3 cup unbleached flour
- 1/3 cup oatmeal
Method
Step 1
Preheat oven to 350 degrees. Into a large bowl, add sweet potatoes, sugar, 1/2 cup melted butter, eggs and vanilla and mix well. Place in ungreased 3 quart ovenproof dish.
Step 2
For granola topping: In a medium bowl, mix together brown sugar, melted butter, flour and old fashioned oatmeal. Sprinkle evenly over potato mixture.
Step 3
Bake for 40-50 minutes, serve hot.
