Move over mashed potatoes, Edamame Purée is here to stay

Ingredients

  • 1 16-ounce bag frozen, shelled edamame, cooked according to directions in microwave
  • 1 12-ounce bag frozen, shelled peas, cooked according to directions in microwave
  • 1 very large garlic clove
  • 1 lime, juiced
  • 1 teaspoon wasabi powder
  • 1/2 teaspoon turmeric
  • 2 scallions, washed with ends removed
  • 3 tablespoons sour cream
  • 1/4 cup Italian parsley
  • 1 tablespoon butter-flavored olive oil
  • 1/8 cup almonds, chopped and toasted for garnish

Method

Step 1

Drain edamame and peas in colander. Into the bowl of a food processor, add edamame, peas, garlic clove, lime juice, wasabi powder, turmeric, scallions, sour cream, Italian parsley and olive oil. Whirl until smooth and creamy.

Step 2

Heat oven to 350. Into a sprayed, 1-quart Le Creuset Dutch oven, place all the blended ingredients. Sprinkle toasted almonds over top. Place in preheated oven with lid on Dutch oven and heat for 30 minutes. Serve hot.
