In a blender, whisk eggs until blended. Add in flour, xanthan gum and oats, mix. Then add milk and vanilla, blend. Set aside. In a 10 inch ovenproof skillet, melt the butter and saute the bananas and almonds. Add cinnamon, sugar and salt and cook until bananas soften and almonds appear toasted. Heat oven to 450 degrees. Pour egg mixture over the top of bananas in skillet and bake for 20 minutes. Serve with maple syrup, lemon juice or powdered sugar sprinkled over the top.Method
