Ingredients

  • 4 eggs
  • 1/2 cup gluten free flour
  • 1/4 tsp. xanthan gum
  • 1/3 cup gluten free oats
  • 1/2 cup milk (soy milk works!)
  • 1 tsp. vanilla
  • 4 T. butter
  • 2 bananas, sliced
  • 1/2 cup almonds, slivered
  • 1 tsp. cinnamon
  • 2 T. sugar
  • 1/2 tsp. salt

Method

Step 1

In a blender, whisk eggs until blended. Add in flour, xanthan gum and oats, mix. Then add milk and vanilla, blend. Set aside.

Step 2

In a 10 inch ovenproof skillet, melt the butter and saute the bananas and almonds. Add cinnamon, sugar and salt and cook until bananas soften and almonds appear toasted.

Step 3

Heat oven to 450 degrees. Pour egg mixture over the top of bananas in skillet and bake for 20 minutes.

Step 4

Serve with maple syrup, lemon juice or powdered sugar sprinkled over the top.
