In a small bowl, combine flour, xantan gum, soda, salt and cinnamon. Set aside. In a larger bowl, mix butter, sugars and vanilla. Add eggs. Gradually add flour mixture to this bowl and mix well. Add chocolate chips and nuts. Scoop dough into balls, about the size of a teaspoon, and drop onto ungreased cookie sheet. Bake at 375 degrees for 8-10 minutes, cool on racks.
