Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 tsp. Mexican vanilla extract
  • 2 eggs
  • 1 tsp. Saigon cinnamon
  • 2 cups semi sweet chocolate chips
  • 1 cup nuts of choice, chopped
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 1/4 cups coconut flour

Method

Step 1

Heat oven to 350 degrees. Cream together: butter, sugars, vanilla and eggs.

Step 2

In another bowl, combine: cinnamon, chocolate chips, nuts, flour, baking soda and salt.

Step 3

Add dry mixture to butter mixture, combine well.

Step 4

Drop by scooped tablespoons onto ungreased baking sheets, flatten slightly with palms of hands. Bake 8-10 minutes, cool on cooling rack.

Step 5

Cookies will have a shortbread consistency and are wonderful dipped in coffee!
