Ingredients

  • 8 ounces large shrimp, peeled and deveined
  • Coconut balsamic vinegar
  • Lime olive oil
  • Shredded coconut to roll shrimp in
  • Freshly ground pepper
  • Lime zest, optional, from one lime
  • Small wooden skewers

Method

Step 1

Marinate shrimp in equal parts vinegar and olive oil for at least an hour, including zest, if using.

Step 2

Slide 3 shrimp onto each skewer.

Step 3

Pepper the shrimp, then dredge in coconut.

Step 4

Grill until shrimp are pink, about 2-3 minutes per side.
