Using a mandolin or very sharp knife, slice thin pieces of squash lengthwise, reserving the ends and pieces that don't stay intact. Spread squash out on a baking sheet and brush both sides with EVOO, then sprinkle both sides with lemon pepper, garlic powder and paprika. Onto very hot grill, place a row of squash at a 45 degree angle and cook for one minute. Reverse the 45 degree angle and cook for one more minute, creating BBQ lines on vegetable. Repeat on other side of vegetable. Arrange aesthetically on a plate in either a herringbone pattern or weave. Beautiful presentation!Method
