Ingredients
- 3 tablespoons butter
- 2 1/2 cups flour (or 1 cup flour and 1 1/2 cups old fashioned oats)
- 2 tablespoons sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup craisins, raisins or dried fruit of choice
- 3/4 cup buttermilk
Method
Step 1
Preheat oven to 375 degrees. In a large mixing bowl, cut butter into flour, (oats), sugar, soda, baking powder and salt until resembling fine crumbs. Stir in craisins and buttermilk to make a soft dough. Adjust flour and buttermilk until it all holds together.
Step 2
Turn onto lightly floured board and knead dough until smooth. Shape into a dome and place on greased cookie sheet. Cut an "X" in the center of the loaf.
Step 3
Bake 35 minutes until golden brown. Brush with butter if desired. Wonderful hot or cold, with butter and/or jam.
