First, you may NOT substitute with regular limes. Key limes are more aromatic with a floral tasting juice and the zest is to die for. Find them at specialty grocers and enjoy!
Ingredients
Preheat oven to 300 degrees F.
In the bowl of a food processor, whirl the graham crackers until crumbly. Add the butter and whirl again.
Press crumbs into the bottom and partially up the sides of a sprayed and sugared 9-inch springform pan. Using an electric mixer and large mixing bowl, add the cream cheese, sugar, cornstarch, zest and mix until smooth. Add eggs in one at a time, blending until smooth. Add key lime juice and mix on low speed. Mix only until blended. Pour batter into prepared springform pan. Bake cheesecake at 300 degrees for 55-65 minutes or until set in center. Leaving cake in oven, turn oven off and let cake stand in oven 30 more minutes with the door slightly ajar. Remove from oven and refrigerate overnight.Method
