You can’t go wrong with peaches, mozzarella cheese, fresh basil and aged balsamic vinegar. Add those tomatoes if you must and it will be both beautiful and delicious. Either way, you have a pretty, easy and healthy summer salad!

Ingredients

  • 8-ounces sliced, fresh mozzarella cheese
  • 15-ounces sliced peaches, drained (use fresh if you like but I am not a fan of the fuzzy skin)
  • Handful of fresh basil to tuck in amongst the cheese and peaches
  • Aged balsamic vinegar for drizzling
  • Himalayan Salt

Method

Step 1

Open the cheese. Drain the peaches. Have the basil handy. On a flat platter, alternate the cheese and peaches until all ingredients have been used. Gently grind Himalayan salt over all.

Step 2

Drizzle balsamic over all the peaches and cheese. Tuck basil in between cheese and fruit. Enjoy!
