Ingredients
- 1- 8 oz. burrata, drained
- 1/4 cup basil pesto
- Zest of 1 lemon
- 1 T. fresh lemon juice
- 2 T. mascarpone cheese
- 2 shakes of white pepper
- vanilla fig balsamic vinegar (or balsamic of choice)
- Baguettes or crackers
Method
Step 1
Slice bottom of burrata and gently scoop out filling into a bowl. Add to bowl: pesto, zest, juice, mascarpone and white pepper. Mix well.
Step 2
Gently scoop filling back into burrata shell and seal bottom closed, reserving extra filling.
Step 3
Place on serving dish and drizzle vanilla fig balsamic over top. Enjoy with baguettes or crackers.
