Ingredients

  • 1 cup brown sugar
  • 2/3 cups coconut oil
  • 1 large egg
  • 1 cup buttermilk or sour milk (1 teaspoon white vinegar and the rest milk)
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 2 1/2 cups flour (+2 tablespoons if at high altitude)
  • 1 1/2 generous cups diced rhubarb (I use heaping portions!)
  • 1/3 cups nuts, if desired
  • Topping:
  • 1/2 cup sugar
  • 2 tablespoons butter

Method

Step 1

Line 2 loaf pans with parchment paper. Spray and sugar 2 loaf pans, shaking out excess. Heat oven to 350 degrees.

Step 2

In a large bowl, mix all of the above bread ingredients and pour into prepared loaf pans.

Step 3

Mix topping ingredients and crumble over tops. Bake 40-50 minutes. Cool.
