Warm up the kitchen and enjoy the aroma of fall vegetables while the snow flies!

Ingredients

  • 6 medium zucchini, chopped into thick chunks
  • 3 vidalia onions, sliced
  • 8-ounces small potatoes, sliced thinly
  • 8-ounces bella mushrooms, sliced into chunks
  • 4 garlic cloves, chopped
  • 1/2 cup avocado oil
  • Himalayan salt
  • Freshly ground pepper
  • Paprika
  • Turmeric

Method

Step 1

Preheat oven to 375 degrees. In a large bowl, add zucchini, onions, potatoes, mushrooms and garlic cloves. Mix well. Pour the avocado oil over vegetables and toss well.

Step 2

Add salt, pepper, paprika and turmeric generously to taste and toss.

Step 3

Place all vegetables in a large, high-sided roasting pan. I use the same one used for cooking a turkey.

Step 4

Roast in oven for a total of 30 minutes, tossing every ten minutes. Serve hot.
