Ingredients
Preheat oven to 375 degrees.
In a large bowl, add zucchini, onions, potatoes, mushrooms and garlic cloves. Mix well. Pour the avocado oil over vegetables and toss well. Add salt, pepper, paprika and turmeric generously to taste and toss. Place all vegetables in a large, high-sided roasting pan. I use the same one used for cooking a turkey. Roast in oven for a total of 30 minutes, tossing every ten minutes. Serve hot.Method
