This is one of the easiest recipes I’ve ever made with all the ingredients in the house already! Win Win!

Ingredients

  • EVOO (extra virgin olive oil)
  • 1 tablespoon kosher salt plus 1 1/2 teaspoons
  • 1 pound linguine or spaghetti
  • 6 tablespoons butter-flavored EVOO
  • 5 tablespoons EVOO
  • 8 large garlic cloves, minced
  • 2 pounds large shrimp, wild, peeled and deveined
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons dried parsley
  • 1 lemon, zested
  • 4 large lemons, juiced
  • 1 lemon, sliced
  • 1/4 teaspoon hot red pepper flakes

Method

Step 1

Into a large pot of boiling water, drizzle some EVOO and add 1 tablespoon of the salt. Add the linguine and cook until al dente or personal preference. Drain.

Step 2

In another large, heavy-bottomed pan ( I prefer Le Creuset brasiers for this task), melt the butter oil and olive oil over medium-low heat. Add the garlic. Saute for one minute taking care not to burn. Add the shrimp, 1 1/2 teaspoons salt and pepper and saute until the shrimp turn pink, about 5 minutes, stirring often. Remove pan from heat and mix in the parsley, lemon zest, lemon juice, lemon slices and red pepper flakes.Toss gently.

Step 3

Add the pasta to shrimp mixture and toss well to combine. Enjoy!
