Ingredients

  • 1 baguette, regular or gluten free (both work fine)
  • 1/3 cup walnut oil
  • 4-ounces mascarpone cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon capers, drained and rinsed and dried
  • 4-ounces cold smoked salmon, cut into slices that would fit nicely on toasts
  • 1 avocado, ripe, cut into thin slivers and sprinkled with lemon juice to avoid darkening
  • 1 lemon, zested and juiced
  • 1/8 teaspoon dried dill plus extra for garnishing

Method

Step 1

Slice baguette on the diagonal, 1/4" thick. Brush both sides of slices with walnut oil and then bake at 350 degrees for 8-10 minutes. Cool to room temperature.

Step 2

Mix together cheese, mustard, capers, zest and 1/8 teaspoon dill.

Step 3

Spread thin layer onto each slice of bread. Layer a slice of salmon and then avocado on top. Sprinkle with dill. Serve.
