Thank you, Food Network, for this fun and easy cookie recipe! This recipe will bring out your inner-camper without having to leave your cool home. Ingredients

  • 1 cup creamy peanut butter
  • 2/3 cup granulated sugar plus more for rolling
  • 1/3 cup packed brown sugar
  • 1/4 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 12 marshmallows, cut in half
  • 24 milk or semi sweet chocolate candies

Method

Step 1

Preheat oven to 350 degrees. Line two baking sheets with parchment paper.

Step 2

In a large bowl, beat the peanut butter, granulated sugar, brown sugar and salt until light and fluffy. Beat in vanilla and egg. Chill for about a half hour.

Step 3

Roll dough into 24 small balls. Roll the dough balls in the extra granulated sugar and place evenly spaced on baking sheets, 12 per sheet. Gently press each ball down slightly with a fork.

Step 4

Bake cookies about ten minutes. Bake second sheet. Then turn broiler on. Top each cookie with a marshmallow, sticky side down.

Step 5

Put sheets in one at a time under broiler and watch carefully! They will only need a minute or two to become perfectly browned. Remove from oven and quickly place a chocolate in the warm marshmallow center. Repeat with second sheet. Cool on rack and store in airtight container until ready to enjoy.
