Ingredients

  • 5 tablespoons peach preserves
  • 1 chipotle in adobo sauce, chopped
  • ~1/5 pounds beef, cubed (rib eye, skirt steak or top sirloin)
  • Seasoned salt
  • Freshly ground pepper
  • 24 ounces canned peaches in water, sliced
  • 1/4 cup cilantro, chopped
  • 1 1/2 cups mango salsa
  • 6" wooden skewers, presoaked for an hour

Method

Step 1

Mix peach preserves and chipotle, set aside.

Step 2

Sprinkle seasoned salt and pepper over beef cubes. Thread 2 cubes and 2 slices of peach, alternating, on 6" wooden skewers. Repeat until all meat and peaches are used.

Step 3

Spray grill with non-stick spray, cook skewers once hot to taste. Remove k-bobs and brush with preserves mixture.

Step 4

Mix cilantro into mango salsa, serve with k-bobs. (If dinner is desired, just make with longer skewers.)
