This appetizer looks like a larger, really tasty piece of sushi.

Ingredients

  • 8 medium zucchini, washed
  • 8 ounces Neufchatel Cheese, room temperature, or Mascarpone
  • 1 lemon, zested and juiced
  • 1 tablespoon capers, rinsed and dried
  • 2 tablespoon Deli mustard with horseradish
  • 1/4 teaspoon Old Bay Seafood Seasoning©
  • 8 ounces smoked salmon, thinly sliced
 

Method

Step 1

Cut ends off zucchini. Using a mandolin, carefully slice squash lengthwise, thin enough that it can be rolled without breaking. Continue until all are sliced. The 2 outside pieces from each one should be set aside for another use.

Step 2

Combine Neufchatel cheese, lemon zest and juice, capers, deli mustard and Old Bay Seasoning©. (I often do this step a day ahead and then assemble them the day I need them, serving up fresh and colorful deliciousness.)

Step 3

Layer one slice of zucchini, salmon (but not overlapping) and a thin strip of cheese mixture spread the entire length.

Step 4

Start at one end rolling tightly, then skewer with toothpick to hold closed. Make earlier in the day of entertaining and then there's one less thing to do at the last minute. Enjoy!
