Peel, chop and roast beets in EVOO, salt and pepper in 375 degree oven until soft, about 45 minutes. Meanwhile, form small balls with goat cheese, roll in lemon zest and then in chopped cilantro, skewer cheese with beets, set aside. Drizzle balsamic vinegar on plate, place skewers on top, serve.
