Tuesday Tailgating Rocks at Red Rocks!
Pre-concert tailgating on a “school night” aka “work night” takes on a whole new challenge with planning ahead a must! There is really more than just the menu to think about so let me share with you how it works for us: We needed to drive to Red Rocks and set up for a nice tailgate dinner pre-concert. Pack car with: cooler full of food, boat grill with land legs and LP tank that is full because there is no PLAN B, small table, folding chairs, cutlery, plates, napkins, garbage and recycling bags, wine, plastic wine glasses. ‘Ove Gloves are a must for handling hot things…as seen on TV, yup, those ones, love them! (I get nothing for this endorsement, just love the product.)
Dinner menu: again, being a “school night” it was simple. Happy hour was a cheese plate with two kinds of cheese and sliced apples using my ceramic knife to keep the apples from turning dark. Dinner was an Asian Salad, Rice and Grilled Coconut Shrimp Kabobs. The shrimp was oiled with Lime olive oil, sprinkled with pepper and dredged in coconut. This I did the day before. Just before leaving for the concert I sprinkled some Cara Cara orange vinegar onto the shrimp. The reason I waited is that the vinegar will make the protein mushy if left on too long. Don’t ask me how I know this :). The result was awesome!
Here is the bottom line – entertaining can take place in many different forms and at interesting venues. We love tailgating at Red Rocks and grilling on our boat in the summer. The back bowl of Vail in the winter for lunch on a ski day is my favorite. Traditional entertaining in our home for dinner is also fun and enjoyable. You set the stage and create the ambiance. My advice to anyone new at this is to have fun, experiment and keep it eclectic!
